5-hydroxymethyfurfural is an important platform chemical, which can be produced by hydrothermal conversion of chitin biomass. 5-Hydroxymethyfurfural converted into value-added chemicals and liquid fuels. Thus, the utilization biomass will help consume crustacean waste reduce environmental problems caused overuse fossil resources. This review summarizes recent process in production from solvent-catalytic systems. The topics mainly include solvent systems, catalysts, mechanisms. Suitable system improve 5-hydroxymethyfurfural. Especially, strong solubility concentrated salt solution resulted mild reaction temperature.
